Since 2003, Mexican chef Angel Vázquez brings flavors from places like Morocco, Thailand and France to the Puebla tables. His restaurant Intro - Angel’s first gastronomic endeavor - became, from its conception, a disruptive proposal that offered new alternatives in a city where traditional Poblana or Spanish cuisine establishments predominated. Today, Intro is one of the most affluent restaurants in Puebla, based on a strategy that evokes a territory or a gastronomic culture parting from the use of their emblematic flavors, rather than rigorously following traditional recipes.
Angel obtained his bachelor’s degree in Gastronomy and a master's degree in Food and Beverage Management at the Culinary Institute of Mexico, Puebla campus, he then continued his studies in Paris at the École Lenotrê and at the Ferrandi École Française de Gastronomie, as well as at L’Institut Paul Bocuse, in Lyon, France, followed by various courses and workshops in Thailand. An essential part of his professional training comes from his work in restaurants in New York, Ze Kitchen Galerie - Paris, and El Cingle - Barcelona.
He has won numerous awards and recognitions ever since his student days, including the gold medal at the FHA Singapore 2010, leading the Culinary Arts Olympic Team.
His experience and the quality of his work have led him to cook for great personalities in Mexico, Luxembourg, Singapore, Peru, Jakarta, Europe and various cities in the United States.
He is, in fact, recognized as one of the great promoters of Mexican cuisine in the world, for his enthusiasm when showcasing this country’s cuisine at several international forums.
He was the ambassador of the Pueblan cuisine in Berlin, Germany 2011; in Lima, Peru 2012, and at the Gourmet Festival in Chicago, USA 2013. He served the opening cocktail at the FITUR (International Tourism Fair) in Madrid, Spain 2013, and has participated twice in the Vatican’s "Mexican Christmas Cocktail". More recently, he was the chef in charge of preparing the food for Pope Francis in the Apostolic Nunciature of Mexico City.
Furthermore, chef Vázquez has created other successful projects that demonstrate the solidity and versatility of his gastronomic proposal: Salomé, seafood and cocktails; Carbón, burger central, and Augurio, a restaurant that recently opened its second branch, a true testimony to Angel’s deep knowledge of traditional Poblana cuisine; Augurio was awarded “Best New Restaurant” at the Gourmet Awards Mexico 2017.
Throughout these 15 years, Angel Vázquez's restless nature and curiosity led him to search and discover Mexican products that were not easily found in Puebla before; over time, by approaching all these new suppliers, he has created a network that benefited not only his restaurants, but a large number of establishments in the city, expanding the market and enriching the state’s culinary offer.
The innovative work and boldness of Angel Vázquez have made him one of the leading chefs of Mexico’s contemporary gastronomic scene.
